Vigna radiata INFANTILE FLOUR ENRICHED FROM THE MENABE REGION’S AVAILABLE RESOURCES

234 In order to replace cereals as the basis for infant flours, a new approach has been developed, using germinated mung bean or "Vigna radiata". Enrichment is achieved by artisanal supplementation using resources available in the Menabe region : corn, groundnuts, orange-peeled sweet potatoes and baobab. Physico-chemical analyses showed carbohydrate and protein contents in accordance with recommendations (BNM, 2023 ; Institute of Medicine, 2000 and WHO, 2002). The addition of groundnuts brings the lipids into line. Despite processing, nutrient levels such as phosphorus, potassium, copper, magnesium and manganese are in line with BNM (2023) and WHO (2002) recommendations. Thanks to germination, antioxidant activity and increased levels of polyphenols are observed, providing potential health benefits by combating oxidative damage. In sensory tests, 65% of mothers were satisfied with the bright color, taste, texture and aroma of the porridge.
