Evaluation de la contamination microbiologique des aliments de rue dans la commune rurale de mantasoa

In developing countries including
Madagascar, street food often describes an urban
area. Actually, many research have been conducted
to evaluate the risks of food-borne diseases in such
areas. This study aims to investigate the level of
contamination of the street food in a rural area
regarding the hygienic quality of these food.
Particularly it was conducted in the 11 fokontany of
the municipality of Mantasoa, a tourist site which is
appreciated by both national and international
visitors. Many series of surveys were performed
between 2019 and 2022 which involved the vendors,
the consumers, the responsible of the CSB and the
authorities in the Fokotany and the city hall. Then,
street food samples were collected for
microbiological analysis. 70 vendors were
enumerated over the Municipality. It was shown that
71% of the vendors are female and 60% were aged
over 40years old. The consumers touched all the age
group in which, 10.13 % were under 5 years old. For
the people in Mantasoa, ready to eat food are not a
subsistence meal, as the main reason of eating such
food is snacking (87%) and no disease were checked
during these surveys. Among the 34 street-food
collected, 100% were contaminated, especially by
indicator organisms transferred by the handlers and
the weathering microorganisms. This level of
contamination confers an unsatisfying quality for
these ready-to-eat food. The coffee, which is the most
appreciated ready-to-eat food, have an acceptable
quality. However, the results showed a high level of
contamination of the ready-to-eat food in the
municipality of Mantasoa but a low incidence of
foodborne diseases were noticed. The complex
situation is uncomfortable for those the medical
hygiene officers while, consumers in Mantasoa do
not see it as a primary problem. This subsequently
requires an in-depth study of consumers behaviour.
